Are there instructions somewhere for how to run multiple clients of courier bot on one PC?
Is it even possible to do or do I have to figure out how to do virtual pc?

There isn't much special about multiple clients. Make sure that all accounts are omega and you can configure multiple clients in evepilot and just have all the check boxes on when you start. Courier doesn't need fleet setup or anything like that.

So multiclient does actually work with courier bots? What I'm finding has only suggested it works for miner bots.

You can use trial version and check if bot will work good or not in multiclient mode.
Any bot may be started as multiclient. Bot types may be mixed (miner + courier).
